Depends on which branch you wish to opt for. Old iits are considered best for overall excellence. The top NITS are equally good. See if you are getting your dream branch in top NIT then go for it. If you are not branch specific come to old IITS, we have Wonderful environment here to explore, learn and innovate. Joining IIT will tag a brand behind your name.(an incentive)

You have a great rank in jee main you would get NIT and branch of your choice , but your jee advanced rank is also decent you may take a old IIT with a inferior branch and then work hard there for good cgpa so that you can upgrade your branch

If you are getting the branch of your choice to study at the NITs, then I would recommend that you should go for the NITs.
If you take admission in the IITs and you do not enjoy what you are studying, then there is no point.

See according to previous year cutoffs you will get Metallurgy or other such branches in BHU and maybe mechanical electronics in newer IITs.
At 4k in Mains you will get IT at MNIT, Allahabad.
Job wise IT is better. But if you are interested in Metallurgy or other such branches....go for it
