The standard syllabus for NEET UG exam follows the NCERT books pattern. If you can master all the NCERT books while buliding concepts and solving the MCQ questions, you will do fine.

I myself has a very narrow range of books which I find relevant .
For biology - for reading ncert is enough but if u still wanna know more than u can study Trueman's . for mcq either GRB or dinesh are good .
For chemistry - GRB
For physics - GRB or arihant
Rest the choice is yours the market is full of books

Importance of the books depends upon what you are looking for. The very first thing here is to prepare for that there is only one book  to refer i.e, NCERT. You have to prepare all the three subject from ncert and specially for biology, read and learn ncert like you hadn't missed anything from it. Nothing in ncert is tp ignore, everything here, have some weight.
Now after that one major part is to practice questions as much as you can, every single question you solve takes you nearer to selection. So better is to choose a book which have a lot of questions and is on the present trend. And best is you get previous year question papers of neet and try solving them in proper time.
