In arts it is good if I will take English Hons and economics hons plus sociology you are requested to give me more suggestions.
From arts side you have a variety of options to choose from. I would like suggest pursue the subject you are most interested in so after a point of time you should not regret or feel burdened with the subject you are doing. You can hv a major and minor degree at the same time in any two subjects for eg majors in English and minor in sociology/political science or history/philosophy etc.
Just to help you I am providing you a brief description about the subjects you hv mentioned:
If you take up English majors, you will be studying about the history of English literature, different eras and read and learn critical thinking/commentary on the texts by various authors.
In political science majors you will learn different political theory, debates surrounding them, about political philosophers, political systems etc
In History you learn from ancient history to modern history, different debates and different historians, different perspective of learning and understanding, interpretating history etc.
Sociology is all about society, you learn about societal orders, different theorems, problems in the society etc.

Pursuing a arts subjects has different field specific professions available + the option of civil services and state exams are always open in addition to that.
