Hello,
You should cover NCERT for in-depth understanding of concepts.There is not any specific topics in NCERT from which questions come in JEE.Questions in JEE mains are very different from what you study in class 11 and 12. You should cover ncert and then you can move on to books like RD Sharma and RS Aggarwal and finally you can refer to TMH publications books, you must also solve past year question papers.

Yes they are required for jee mains 2021. They are of great use because they improve our basic concepts and knowledge about particular chapter. Also almost 25 percent Questions are directly picked from ncert so they are very useful as well as helpful.
