For preparation of any of the examinations, it is of utmost importance to study NCERT textbooks very well because most of the questions asked are within the topics of this book. Secondly, and equally important is the fact that you need to have a strong grip over the concepts of physics and chemistry, for which you must refer some standard book for these subjects. Questions asked in AIIMS entrance in particular require a higher order thinking skills that you can develop out of practice and exposure to more numbers of questions, particularly in physics and organic chemistry. Questions in physical chemistry can be tricky sometimes but is mostly manageable. As far as biology is concerned, there is as such no subset for the amount of information that you should be knowing, however NCERT is your frame of reference and a little more in depth information on the topics mentioned in NCERT should help you out.
Apart from the main subjects, AIIMS entrance will also allocate a section for general knowledge, an area where many students fail to concentrate much. Given the intense level of competition, allocate sometime in building your general knowledge of notable current affairs. Most importantly get your doubts clarified as soon as you get them. Claritin concepts will get you halfway through the process of preparation.
AIIMS has a separate category for General Knowledge questions and also Assertion and reasoning.
If you are planning for AIIMS , also include GK in your preparation with an aim to have crystal clear concepts for Reason and Assertion.
Otherwise NEET definitely has more number of seats.
If you are just starting , aim for NEET. As you solve previous papers, you get to know where you stand and how much harder you need to work for AIIMS.

Ur preparation should depend on the state u belong to as well as where u prefer to go after your entrances ..
If Ur preparing for Neet-ug it is more safe as u are exposed to a lot of clgs all across the country , and chances are higher ...if Ur solely preparing for AIIMS and not able to get the cut off and your neet doesn't go well then it will be a mess up ...I would suggest u prepare for Neet-ug with exposure to few AIIMS level questions ..as a result u can chose clgs throughout the country and if you can make it to the AIIMS , the merrier

Focus on biology the most followed by both physics and chem.....hc verma in physics.....biology pradeep ....chemistry abc and pradeep are some of the good books.....u could look for .......
Regarding exams ...a must thorough preparation is i suggest.
If u r thorough with the state books and ncert textbooks.....u could easily score 70% of marks.....for more....i suggest to go with more practice from reference books.
And i suggest don't worry about the seat ....work for the time remaining.....u would definitely get a seat....

but where can I get HC varma's concept of physics book.and Dinesh objective questions for all three subjects.? tell me the place of availability of books or websites for online purchasing.!!

The books should be available in the bookstore nearest to you. If not, you can always check on Amazon India, they usually have discounts.
