Hi Pro,
I am afraid that there is no provision for editing or changing the caste category after you have already filled the caste category in the application form and submitted the same for an entrance examination. These instructions are laid out by the governing authorities of almost all entrance examinations in India.
A better and clearer answer would have been provided if you had mentioned which entrance examination you were referring to while asking your question.
