You will get the college that is possible for you at your rank. It won't be that you may get any other college. So even if you put an option that you can't get (based on previous years cut offs) above the one that you are getting, it won't slide up and your choice will remain the same. As in, in your case, you are getting IIT Gandhinagar, so you will get this as IIT kharagpur is not a possible option. Also, if according to last year's trends, if you can get Varanasi then it will slide up( you need to choose the float option for that, if you select freeze, then your seat gets fixed).

You may surely pursue the course of bsc biotechnology after 12th with PCB subjects. You need to fullfill all the eligibilty criteria of institute in which you are intrested for admission. The salary for b.tech biotech graduate variates significantly depending upon the college the person pursued his/her course, the skills of that person, vacancies, etc. The average annual salary by the leading biotech companies ranges from Rs.2,29,238 to Rs.8,28,746 per year. As you are from Maharashtra, the best option for you is IIT Bombay. It is one of the three IITs which offer Biotech courses. Other than this there are no class 1 option for this kind of course in Maharashtra.
IIT Madras and IIT Kanpur also offers courses in Biotechnology.
