applied mathematics and engineering physics are good branches if you have interest in maths or physics respectively and want to go for higher studies.
economics is a good branch and is growing in India.
Civil branch has less placement but if you want to choose college over branch and exposure over placement ,you should definitely go for iit bombay.

Its all depends upon you interest all iit are best.If you are interested in aerospace or chemical or cse than go for it..its totally depends on you. I suggest to go for IIT Bombay because their placement ,quality of education provided,infrastructure are best among all the IITs...
All fields are good.what matters is having interest in it.

Placements are good I think highest package offered Is 28lac per annum
See as you are getting NSIT Delhi CSE , it is not bad. You should go for it. But here you are also telling that If you drop this year then as you say you will get IIT Delhi CSE.
I don't know it is confidence or over-confidence. But if you are confident about yourselves then you can drop no problem. But to be on safe side i would suggest that you take admission in NSIT and then prepare for next year as first year syllabus is more or less similar to 12th syllabus.
But it is your life so you have to decide. I am just suggesting , You take your own decision.

If you are passionate about engineering physics , then only you are going for IIT Delhi. See if you talk about placements then it is no less than core jobs. Companies visit exclusively for Engineering Physics just like google visiting for CS students.
So only one thing is required , you should be maintaining your grad i.e. CG. The better your cg is more the chances of getting placements as rest the IIT tag does.
You also have another option going for higher studies in USA or GERMANY.
