Psychology is a great field of study and economics is always the popular one. And for bachelor's degree your stream is not an obstacle. You can do B.sc Psychology with economics or B.A. Psychology with economics as an optional subject, it is provided in several colleges and universities:

4. Banaras Hindu University, Varanasi

These are some institutes you can apply in for psychology with economics. Some of them offer both B.A. and B.sc in psychology and some them offer only B.A.

Of course you can get into AI and computer science fields even if you have no previous backgrounds in any of these. However, you have to start studying from day 1 in order to be in the league of your peers with computer background.

It will take hardly 3-4 months to get familiar with the concepts of computer science and from there on you can proceed for AI.
