You need to show the proof of documents only at the time of counseling or admissions. You don't need to produce it at the time of filling the MHTCET application form. So, for now select the SEBC category for which you will be having the documents afterwards and

Karnataka is a state which allows candidates from other states too to participate in the State counseling. It is an Open state and thus, you can definitely take part in the 85% state quota counseling. You can participate in the counselling by the virtue of having Hyderabad Karnataka

Hope you are doing well.

According to latest report, EWS reservation will be applied only to the medical colleges other than AIIMS . Therefore, I do not think this year EWS reservation will be applicable in AIIMS medical colleges.
