Greetings,
It's good that you have an amazing academic background but to get admission into prestigious universities like IIM, they have their own hurdles to be crossed by a student to get a seat into them. To take admission in IIM, the first stage is appearing for the Common Aptitude Test or CAT Exam conducted by the IIMs.
On clearing the required cut-offs and the composite score, a candidate is called for Written Test/Group Discussion and Personal Interview (PI). The candidate must provide 2 letters of recommendation from people who know them closely for academic and professional validation and admission will be done strictly on the basis of final aggregate.
The CAT cutoff for IIM is typically up to 99 to 100 percentile for General category students which is slightly lower for reserved category students.

As you are a ST candidate so you definitely going to have a reservation benefit in your selection. Now with the academic record you have mentioned in the question if you are able to secure 91+ percentile then you would have good chances to get a call from top IIMs.

Admission process for IIM Ahmedabad is a two step process. The holidays differ from one college to another and depend on the work load of college but maximum times most of the professors do get holidays on Sundays ,holidays during summer and off during semester holidays.
Yes, professors do get off on government holidays and Sundays, but do check up on it as it might differ from institution to institution.

Yes, 99 and 99+ percentile students with a good profile have more chances of getting a call from IIM ABC. The call is based on your profile and it seems to be good then you might get a call. Moreover, you have work experience it will add extra benefits.
