Well yes mantanig temper is an art at JEE exams that comes from the practise.
I would suggest you to give 3 hours long 2 test with 2 hours break in between.
Do this practicse for atleat three days, by that along with your practise you'll get to understand by yourself where you are lagging with time and which subject had took longer time.
After the practise time, analyze your paper, your rough work and your pace with time. Question yourself that where you are falling behind.
It's all about timing in JEE advanced that differs from a selected candidate.

There is no reason to get depressed at your disoriented preparation.
One thing you can do to maintain your temper is to practice meditation for just 3 minutes thrice a day.
This way you can not just maintain your temper but it will also help you focus on your topics and improve your concentration power.
I know it is high time and taking out 3 minutes seems odd but it really helps.
If you haven't even begin with your preparations then follow this TRP recipe that is 1.take your notes make a list of all the important topic. 2. Revise them. 3 practice the previous years question papers as much as you can.
