There are different ways of joining defense services after graduation. Since you have done your graduation in engineering, let's see what will be the most viable options.
1. AFCAT-
Air Force Common Admission Test is an entrance examination for Defense Services. Only graduates can apply for the exam. It is a 2-hour offline exam, which happens twice a year comprising of Numerical ability, Verbal ability, General awareness, Reasoning and Military aptitude. Selected candidates will be then called for Service Selection Board (SSB) interview. SSB is a five-day long interview process where candidates are assessed whether they have Officers like Quality. The interview process includes psychological assessments, intelligence test, group tasks, and a personal interview. On the final day, based on the marks obtained on different elements, a candidate is either recommended or not recommended for the medical fitness test. Only after clearing the medical test, they can enter airforce.
If you want to apply to flying branch, the Pilot Aptitude Battery Test (PABT) is also part of the selection process.
If you want to apply to the technical branch, Engineering Knowledge test (EKT) has to be given after AFCAT.

2. CDSE- Common Defense Service Examination is another entrance examination to enter defense services. Through CDSE, candidates can either enter IMA (Indian Military Academy) or OTA (Officers Training Academy). Syllabus of IMA CDSE includes General Awareness, English and Mathematics. OTA CDSE comprises General Awareness and English. CDSE is followed by SSB and Medical test. If you wish to enter flying branch, you are expected to clear PABT as well.
3. NCC- If you were involved in National Cadet Cops and managed to secure at least B grade in their C level certificate then you are allowed to directly sit for SSB. NCC certificate also helps in reducing cut off marks in SSB.
Few other points to keep in consideration while applying to defense
1. You are below 25 years.
2. You are unmarried.
3. You have scored at least 60% in your graduation.
