You are right in weighing the options quite carefully. It would be a good idea to do your 5-year LLB from a good institution rather than going for an NLU tag. Institute of Law, Nirma University is among the top 5 private universities that offer law. Similarly, NMIMS is also a good institute and most importantly, since it is situated in Mumbai, the opportunities for internship would be much more than that of say, an NLU in a tier-2 city. The only problem could be the difference in fee between an NLU and a private university.
Whether you become a successful professional is a function of how you learn a professional course, rather than where you learn it from. So, your options (NIRMA and NMIMS) appear bang on target. Best of luck!
