CS in VIT, Vellore is better or PES University Bangalore?
PES University, easily.
The CS department is the best at PES Bangalore, the syllabus is dynamic and kept up to date with industry standards.
Placements are far better in PES than most other colleges. At least 100 companies offer 10+ LPA packages and in the last placements cycle, 3-4 companies offered 35+ LPA packages. Being in Bangalore, the IT hub, many companies prefer recruiting from PES and other Bangalore colleges as opposed to even NITs and VIT/Manipal etc.
There are many opportunities for carrying out project work and research, the way the curriculum is delivered focuses more on hands-on learning than theory. In terms of ability to learn and grasp concepts quickly, in my experience, PES students outperform any other institute.
However, campus-wise VIT is much better!

the number of companies hiring interns is very less but the quality is top notch. Companies like Microsoft, Goldman Sachs, Intuit, Wipro etc provide many internship roles for the students at PES University.
For CSE students the number of internships provided is very high, and not so much for core branch students.
For final year students, the companies hiring interns is very high, be it a core branch or and IT branch. From companies like Citrix, Samsung, Intel, Wipro, Zebra, Sapient to startups like InMobi, Intellipaat etc all kinds of intern roles are easily available for students.
Most companies provide a stipend of Rs. 5k- 40k.
A lot of PPOs are made to students through internships.
Also, PESU has a program for students who want a research internship abroad and they even award scholarships for that.
As far as placements are concerned, PESIT is one of the best in Bangalore. The college has 90% placement rate, including students who get recruited through Mass recruiting companies like Cognizant.
